Peach Gum, Snow Swallow & Snow Fungus

Peach gum is the amber resin of the wild peach tree — we soak ours for a full day and night until each piece blooms into soft, jelly-like jewels. Simmered gently with snow fungus, red date and goji, it is the kind of nourishing bowl Cantonese grandmothers have ladled out for generations. Delicate and barely sweet, it is lovely warmed on a cool evening or chilled right through summer.
